Oatmeal Raisin Cannabis Cookies

Ingredients:

  • 1 cup all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg (optional)

  • 1/2 cup cannabutter (make sure to use the appropriate potency based on your preference)

  • 1/4 cup granulated sugar

  • 1/2 cup brown sugar (packed)

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 1/2 cups rolled oats

  • 3/4 cup raisins (or more, if desired)

  • 1/2 cup chopped walnuts (optional)

Instructions:

1. Prepare the Cannabutter:

If you don’t already have cannabutter, you'll need to make it first. Use a slow heat to infuse cannabis into butter over 2-3 hours. Strain out the plant material before using it in the recipe. The potency of your cookies will depend on the strength of your cannabutter.

2. Preheat Oven:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

3. Mix Dry Ingredients:

In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg (if using).

4. Cream Butter and Sugars:

In a large bowl, cream together the cannabutter, granulated sugar, and brown sugar until light and fluffy. This takes about 2-3 minutes with an electric mixer.

5. Add Egg and Vanilla:

Beat in the egg and vanilla extract until fully combined.

6. Combine Wet and Dry Ingredients:

Gradually add the flour mixture to the wet ingredients, mixing just until combined. Don’t overmix the dough.

7. Add Oats and Raisins:

Stir in the rolled oats and raisins (and walnuts, if using).

8. Form Dough Balls:

Using a tablespoon or cookie scoop, form dough balls and place them about 2 inches apart on the prepared baking sheet.

9. Bake:

Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers are still soft. Avoid overbaking for chewy cookies.

10. Cool and Serve:

Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Important Note on Dosage:

  • Make sure to know the potency of your cannabutter to control the strength of each cookie.

  • If you're unsure of the dosage, it's better to start with a lower potency to ensure the cookies are enjoyable and not overwhelming.
